APICIUS Culinary Arts course offerings

APICIUS started operating late 2009 when a group of highly skilled and experienced Chefs (Hotel, onboard Cargo and Cruise ship) came together to form what is now Apicius Culinary Arts & Hotel Management Consultants, Inc. Their passion is to hand down more than 30 years of experience in training and leadership to their students in a warm, friendly, and modern facility, through active cooking and in depth theoretical sessions. Their mission is to provide responsible and skilled culinary leaders, who will apply their trade locally and abroad promoting art, passion and commitment.

APICIUS took their name from Marcus Gavius Apicius who is believed to have been a Roman gourmet and lover of luxury who lived sometime in the 1st century AD during the reign of Tiberius. He is attributed with the authorship of the Roman cookbook Apicius which is considered the first cooking book and recipe collection.

With that in mind, APICIUS proudly introduced a first within Manila a truly affordable and 100% hands-on Culinary Arts. With their success, they have branched out in the Bicol Region: one in Legazpi, and now they’re in Naga City, too.

They offer both Long Term and Short Term Courses as well as Specialized Cooking Program, Ships Cargo Culinary Program, Cargo Ship Cooks Culinary Development Program, and OFW Household Culinary Training. Oha!

DIPLOMA IN CULINARY ARTS, PASTRY AND BAKING

Their unique Diploma professional training program offers you the opportunity to harness the fundamentals skill sets in both Culinary Arts, Baking & Pastry.

The ‘Dual Diploma’ program will offer you the opportunity to learn two unique disciplines with one year to better round your knowledge and skills as a professional for the hospitality food service industry. The opportunity to travel and learn international dishes abroad will widen your culinary understanding and skills.

DURATION: 702 hours

SCHEDULE: August 3, 2015 8am-2pm(M-T-W) 2pm-8pm(M-T-W)

· Pate, terrine and other classic appetizer

· Fish and seafood handling and preparation

· Meat and poultry handling and preparation

· Getting to know classic cooking methods

· Getting to know soups, stocks and mother sauces

· Getting to know national soups and various countries

· Getting to know pasta, rice and egg dishes

· Getting to know French dishes

· Getting to know classic Italian dishes

· Getting to know dishes from Unites States

· Getting to know basic vegetarian cooking

· Getting to know some Asian cooking

· Getting to know Classic International Dessert and Sweets

· How to create menu

 

FUNDAMENTAL CULINARY ARTS

This course will introduce to you the basics of Culinary Arts. We will teach you cooking techniques and how to prepare International Food in a professional way. This course will provide you the base for a career as a successful culinary professional.

DURATION: 144 hours

SCHEDULE: August 6, 2015 8am-2pm(TH-F-S) 2pm-8pm(TH-F-S)

TUITION FEE: 39,000*

BASIC PASTRY & BAKING

This course will provide you with the basic knowledge on preparation of international desserts and basic cake production.

DURATION: 144 hours

TUITION FEE: 45,000*

INSTALLMENT TERMS

TOTAL DOWN PAYMENT: 17,450

MONTHLY: 7,350 (3MONTHS)

Short Summary of the Curriculum:

· Getting to know kitchen equipment and tools.

· Getting to know Ingredients used in Pastry & Baking

· Getting to know Leavening agents

· Getting to know Chocolate and its handling

· Preparation of Sugar Dough, Cookies, Tartlets and Tarts

· Preparation of Pastry Cream, Crème Dessert, Bavaroise, Crème Caramel and more

· Getting to know Classic International Desserts and Sweets

· Preparation of crepes with condiments and sauces

· Preparation of Sponge and what to make from it

· Preparation of Frozen dessert

· Preparation of Basic Bread Items


The great news is, there no need to have a cooking background! In APICIUS CULINARY ARTS, students will learn inspired dishes in their 100% HANDS-ON Culinary Arts Programs taught by internationally experienced Chef Instructors.

What’s more, with all the courses, APICIUS provide course books which include all details of the course and related recipes. Likewise, all ingredients and materials to be utilized during the courses are included in the course fees. Plus, your own set of Chef’s Uniform and shoes, and knives. Sounds great, right?
